Recipe: Broccoli Apple Salad with Lemon-Tahini Dressing

Broccoli Apple Salad with Lemon-Tahini Dressing
(serves 4-6)


Try out this healthy and easy-to-make salad. You and your family will enjoy this refreshing salad!

INGREDIENTS:

For the Creamy Tahini-Lemon Dressing:
3 tbsp extra virgin olive oil
2 tbsp tahini (sesame seed paste)
2 tbsp freshly squeezed lemon juice
2 tbsp pure maple syrup
1 tbsp Dijon mustard
1/4 tsp kosher salt
1/4 tsp black pepper

For the Broccoli Apple Salad:
1 medium head broccoli, about 1lb, cut into bite-sized pieces
3 medium apples, cored and cut into bite-sized pieces
1/2 small red onion, diced
1/3 cup golden raisins (dried cranberries also work)
1/4 cup candied sliced almonds, plain sliced almonds, unsalted pepitas, or unsalted sunflower seeds

PREPARATION:

1) First, make the dressing. Add all dressing ingredients into a small bowl and whisk until smooth. Set aside.


2) Assemble the salad. Add the broccoli, apples, onion, and raisins into a large bowl and stir gently to combine.


3) Pour the dressing over the top and stir gently until everything's coated with the dressing. At this point, you can refrigerate the salad for several hours before serving.


4) Just before serving, sprinkle the nuts or seeds over the top.
