Recipe: Muffin Tin Pumpkin Bread


This bread is so easy to make and so delicious. We've decided to make the pumpkin bread into muffin trays to make it convenient to pack into kids school lunch or as a snack to go. Here is the recipe below:

INGREDIENTS:

1 cup pumpkin puree
1/2 vegetable oil
1/2 cup brown sugar
1/4 cup water
2 eggs
1 tsp vanilla
2-1/4 cups flour
3/4 cup granulated sugar
2 tsp baking powder
1-1/2 tsps pumpkin pie spice
1/2 tsp salt

PREPARATION:

1) Preheat oven to 350F and line muffin try with paper cups.

2) Whisk the pumpkin puree, vegetable oil, brown sugar, water, eggs, and vanilla.

3) In a separate bowl, whisk the flour, granulated sugar, baking powder, pumpkin pie spice and salt.

4) Fold the wet ingredients into the dry ingredients.

5) Add the batter and bake a about 30-40 minutes or until a toothpick inserted into center comes out clean. Let cool and then transfer to a rack to cool completely.
