Gluten-Free Baking with QVC's David Venable

A gluten free diet offers many benefits, from assisting in the digestive cycle, to increasing energy levels. When it comes to gluten free baking, it can often be challenging. Put those challenges aside, thanks to David Venable, QVC’s resident foodie and host of popular show In the Kitchen With David. David offers the following tips for creating bakery quality, gluten free desserts at home:


Mix The Flour

Try using a combination of several gluten free flours (rice, corn, almond and buckwheat) and then add egg whites or Xantham gum for viscosity

Use Add Ins

Incorporate a half cup of dry ingredients like nuts or chocolate chips; this helps improve texture and flavor
Add apple sauce, other fruit and vegetable purees or yogurt to keep baked goods moist; these are also great substitutes for sugar

Don’t Over Bake

Gluten free baked goods typically won’t brown like regular flour based recipes so it may be difficult to tell when it’s done.  If you find the edges of cookies or desserts cooking faster than the centers, reduce your oven heat by 25 degrees; you can also place foil on the edges of larger desserts to really slow things down

Turn Them Out

Don’t allow your baked goods to stay in their baking pans too long, otherwise they’ll get soggy; turn them out as soon as possible. Consider freezing them once they are completely coo; freezing can help improve texture of gluten free baked goods, and it can help extend the life of your recipe
