Recipe: Vegetarian Quesadilla

Today, I am introducing a Mexican dish: Vegetarian Quesadilla. A quesadilla is a wheat tortilla filled with vegetables, meat (if desired), cheese, and savoury mixture. It is folded in half to form a semi-circle or a half-moon shape. Here I have made a vegetarian quesadilla. I don't have exact measurements, but you can estimate the amount of vegetables depending on how many people you have.

Vegetarian Quesadilla


INGREDIENTS:

Whole wheat tortillas
Cheddar Cheese
Red Onion
Corn
Tomato
Bell Peppers
Zucchini
Black Beans
Avocado
Spices

PREPARATION:

1. Preheat oven to 350 degrees.
2. Grate the cheese and chop up each vegetable in a separate dish and set aside.




3. Place tortilla on a tray and fill half with desired toppings.


4. Fold in half and top with cheese.


5. Bake for 10 minutes or until cheese has melted. For garnish, you can top with the salsa (see recipe below) and sour cream.



Pico De Gallo (SALSA Recipe)

INGREDIENTS:

Tomatoes
Red Onion
Cilantro
Jalepeno
Lime Juice
Salt
Other seasoning (cumin, chili powder, coriander...)

PREPARATION:

Chop tomatoes, onion, cilantro and jalapeno. Mix in lime juice and salt (and other seasonings if you are using them). Mix well and let sit for 10 minutes to allow flavours to mingle.
