Recipe: Baked Chicken with Feta and Tomatoes



Baked Chicken with Feta and Tomatoes
Serves 24


INGREDIENTS:

2 tbsp dried oregano
2 tbsp dried thyme
2 tbsp cayenne pepper
2 cups flour
40 pieces skinless chicken thighs
3/4 cup butter
6 cups copped onion
16 cloves garlic, finely chopped
1.75L milk
3 28oz cans plum tomatoes, drained and chopped
200g feta cheese, crumbled
salt and pepper to taste

PREPARATION:

1) Preheat oven to 350 degrees.

2) Combine flour (1 cup), paprika, oregano, thyme, cayenne pepper, salt and pepper in a shallow bowl.

3) In a large heavy pan over medium heat, melt half of the butter. Toss chicken in flour mixture and add to hot pan and cook until browned on both sides. Remove chicken from pan and set aside. Continue until all chicken is browned.


4) Once all chicken is cooked, add remaining butter to pan along with the onion and garlic and cook until they are soft.

5) Add 1 cup of the reserved flour mixture to the onions and cook until bubble and lightly browned. Slowly whisk in milk and bring to a boil, stirring frequently to prevent burning. Add the tomatoes and season to taste.


6) Arrange chicken in a baking pan and pour the sauce over the chicken. Cover and bake in the over for 45 minutes.

7) Remove from oven and sprinkle with feta cheese and bake for 5 minutes longer. Let rest for 5 minutes before serving.

I checked my mail and I was so excited when I received the L'Oreal Superior Preference Infinia Hair Color Voxbox from Influenster.


I received the color in "deep black". Because my natural hair color is black, there isn't a drastic color change, but it did make my hair color bolder. This shade is designed for dark and black shades. The dyes in a conditioning base keep the black more luminous so it never looks dull and always revived. The product was perfect to cover my grays.


How to use (directions):
Step 1 - Colour! Apply your haircolor.
Step 2 - Rinse! Apply conditioner and rinse.
Step 3 - Revive! On the 2nd and 4th week, after shampooing, apply your colour refresher. Leave it in for five minutes, then rinse. Watch your colour revive in an instant! There's no need to use the conditioner, as the color refresher also has conditioning properties.

Over the last few years we’ve seen some pretty epic superhero fights with incredible visual effects and on-point choreography.

Disney California Adventure Park Experience


This was day 2 of our stay in LA and DAY 1 out of 3 of our Disneyland Adventures during our one week Spring Break vacation in Los Angeles, California. We had already purchased our 3-day passes online ahead of time. As a majority of people would say that 3-days would be enough: 1 full day at California Adventure and 2 full days at Disneyland Park. Because there's so much to see at one park, we didn't need to spend extra for the park-hopper add-on.

If you go to California Adventure Park, here's our tip (especially for the Cars fans): go early in the morning to get the Fast Pass for the Radiator Springs Racers ride because later in the day, there will be a very long line up close to 2 hours wait time. It's the most popular attraction I find. Once you get the Fast Pass, save it and go straight to the ride as the line up is shorter early morning. And then you'll be able to go on it the 2nd time using the Fast Pass.

This was our first experience for the Radiator Springs Racers Ride. The last time we've been to Disneyland, Cars Land wasn't even opened yet. We loved the ride so much we wanted to go on it again.


Other areas of the theme park include Bug's Land, Hollywood Land, Pacific Wharf, Paradise Pier, and Grizzly Peak. Cars Land was definitely our favorite part. We had photo ops with the characters. We were lucky to catch Lightning McQueen right after the photo op with Red and Mater in a short period of time near the same location.

Recipe: Braided Calzone

See the recipe on how to make a vegetarian Braided Calzone:


INGREDIENTS:

Pizza Dough
Bell Peppers - diced
Zucchini - diced
Onion - diced
Kale - rough chopped
Garlic - minced
Basil - fresh or dried
Salt and Pepper to taste
Pester - as needed
Olive Oil

PREPARATION:

1) Preheat oven to 375 degrees.

2) Chop up vegetables and mix in a large mixing bowl.


3) Sautee vegetables in oil until browned. Set aside to cool a bit.


4) Cut strips along the left and right ends of the dough (as show in the photo below).


5) Spread pesto on the middle of the dough. Add cooked vegetables on top of the pesto.


6) Now, braid - fold one piece of the right side toward the left side, then fold the left side toward the right side; continue with the braiding process until completely done.


7) Brush top with olive oil and bake in oven for about 35 minutes or until dough is cooled and browned on the top.

Blow Painting and Pointillism Style Mandala Art

What is blow painting? It is a painting technique where the artist blows colourful paint across the paper using straws rather than using a paintbrush. It creates creative abstract art. Here are some of the artwork from participants and myself in one of the Community Arts workshops at Kiwassa Neighbourhood House.





Participants also did a pointillism painting in the 2nd half of the session. What is pointillism? It's a technique of painting in which tiny dots of color are used and applied in patterns to form an image. We also learned to incorporate pointillism technique with mandala art. "Mandala" is a complex abstract design that is usually in a circular form. The word is from the classical Indian language of Sanskrit, meaning "circle". Mandalas can contain both geometric and organic forms.
