Sawmill Creek Wines: Savour Life's Simplest Pleasures

One way to unwind is have a sip of wine. That's what I need lately. I was heading back home from errands and decided to stop at BC Liquor Stores on the way and remembered to pick up some wine. I went in to find a wide variety of Sawmill Creek and I think they all pair nicely with any meal. After choosing the White Zinfandel and Chardonnay, I went to the checkout.


Always my favorite Sawmill Creek Wines are the White Zinfandel, Chardonnay and Merlot. I didn't pick Merlot this time since I already have red wine at home. I have yet to try other ones that I haven't tried in a while.


I was having dinner with my family at my parent's place.  I surprised the family with a big bottle of Sawmill Creek Chardonnay that I brought over. We all shared a glass and enjoyed it with dad's homecooked meals. It brought up a conversation where we discussed about different types of wine and which one we liked most.





CHARDONNAY - Tasting note: tropical fruit notes, subtle oak, and crisp finish. It is great paired with poultry (we eat that a lot), seafood, veal, pork, cream based dishes, or simply on its own.

MERLOT - Tasting note: black currant, soft oak, smooth, medium bodied. It is great paired with beef, lamb, grilled salmon (yumm), pizza, or simply on its own.

Marvel Studios Unveils Phase 3 of Marvel Cinematic Universe

On October 28th, during a special event at the El Capitan Theatre in Hollywood, Marvel Studios President Kevin Feige revealed the films that will make up Phase 3 of the Marvel Cinematic Universe, featuring a mix of fan-favorite characters and several heroes who will be making their big-screen debuts.


The next two films to be released by Marvel are AVENGERS: AGE OF ULTRON on May 1, 2015, and ANT-MAN on July 17, 2015. Marvel revealed the dates and titles of nine additional films through 2019, including upcoming Captain America, Thor, Avengers and Guardians of the Galaxy installments, along with films featuring Black Panther – who, Feige announced, will be played by Chadwick Boseman – Captain Marvel, Doctor Strange, and the Inhumans.

The announced films are as follows:
  • 5/1/15 – AVENGERS: AGE OF ULTRON
  • 7/17/15 – ANT-MAN
  • 5/6/16 – CAPTAIN AMERICA: CIVIL WAR
  • 11/4/16 – DOCTOR STRANGE
  • 5/5/17 – GUARDIANS OF THE GALAXY 2 (previously dated 7/28/17)
  • 7/28/17 – THOR: RAGNAROK
  • 11/3/17 – BLACK PANTHER
  • 5/4/18 – AVENGERS: INFINITY WAR PART I

  • 5/3/19 – AVENGERS: INFINITY WAR PART II

Ten films have already been released in the Marvel Cinematic Universe, beginning with 2008’s IRON MAN. All 10 films opened at #1 domestically and have collectively grossed over $7.1 billion globally.

Two of these films, MARVEL’S THE AVENGERS and IRON MAN 3, set records as the #1 and #2 domestic openings of all time with $207.4 million and $174.1 million respectively. MARVEL’S THE AVENGERS went on to become the third biggest film of all time worldwide, while Marvel’s IRON MAN 3 ranks as the sixth biggest film ever. They are the two highest grossing Super Hero films of all time.

Earlier this year, Marvel’s CAPTAIN AMERICA: THE WINTER SOLDIER, which broke the April opening domestic record with $95 million, earned $714 million worldwide and is the #5 film of 2014. Most recently, Marvel’s GUARDIANS OF THE GALAXY crossed $757 million globally after opening with a domestic August record of $94.3 million and setting an October debut record in China, where it has now grossed nearly $90 million. It’s the #1 film of the year domestically and the #3 film worldwide.

Recipe: Delicious Thai Green Curry Chicken

It was session 3 of the cooking workshop and we learned to make Thai Green Curry Chicken. This dish is probably the most favorite. It's tangy and mild spicy, but my 6-year-old really likes it. I love it too. I like the citrus flavor from the lime and the creamy sauce of the coconut milk. Serve it with coconut rice and that's it! It's very easy to make once you have all the ingredients. For the rice, I used a rice cooker. If you have one, it would really save some preparation time.



Thai Green Curry Chicken

INGREDIENTS:

2 tbsp vegetable oil
2-1/2lb boneless chicken (breast or thigh), each piece cut into bite size pieces
3 cups unsweetened coconut milk
2 tbsp Thai green curry paste
Grated zest of 1 large lime
Juice of 2 large limes
1 cup chicken stock, vegetable stock or water
2 tbsp fish sauce
1 tbsp finely chopped fresh ginger root
4 tbsp shredded or torn Thai basil leaves
4 tbsp cilantro leaves, coarsely chopped
1 chili (optional)
salt and ground pepper to taste


PREPARATION:
  1. Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper.
  2. Add chicken to skillet and cook, turning occasionally until golden brown all over. Transfer chicken out of skillet and set aside.
  3. Add coconut milk to the same skillet and bring to a boil on medium high heat.
  4. Continue to cook on medium-high until the volume of coconut milk is reduced by about 25%. Reduce heat to medium.
  5. Add curry paste and simmer for 5 minutes.
  6. Add lemongrass, lime zest and juice, stock, and fish sauce. Simmer 5 minutes to blend flavors.
  7. Return chicken to skillet and simmer 5-6 minutes longer. Ensure that chicken is cooked through completely.
  8. Stir in chili, ginger, Thai basil and cilantro, stirring to distribute evenly. Cook 3-5 minutes longer.
  9. Serve hot over steamed rice/pasta and garnish with lime wedges, Thai basil, and cilantro.



Coconut Rice
(Prep time: 15 mins / Cook time: 45 mins / serves 6)

INGREDIENTS:

3 tbsp coconut oil
1 clove garlic, minced
1 1/4 tsp salt
2 cups cooked rice

Optional: cinnamon, jasmine, cloves, cayenne and other spices

PREPARATION (to cook the rice):
  1. Fill a pot with 2 cups
  2. Add 1 cup of uncooked rice.
  3. Bring to a boil. Once the water is boiling, reduce to simmer, cover with lid and cook until rice is tender and has absorbed all of the liquid.

PREPARATION (coconut rice):
  1. Melt the coconut oil in a medium saute pan on medium-low heat.
  2. Add the garlic into the oil and heat until garlic is golden brown.
  3. Stir the rice into the coconut oil/garlic mixture until it is evenly coated with coconut oil..
  4. Serve hot with side dishes.

Caramel Apple Strudel: A Perfect October Treat

Here's a dessert that makes the most of crisp Fall apples – drizzled with warm caramel and topped with a scoop of French vanilla ice cream...

If you grew up munching crisp Fall apples, and were lucky enough to occasionally get your hands on a gooey caramel apple, this recipe is for you. It combines fresh apples and spices with flaky fillo dough, sweet caramel topping and a scoop of your favorite ice cream – perfect for an elegant dinner party or a Halloween party treat.

Fillo (also spelled “filo” and “phyllo”) is the Greek word for leaf. Fillo pastry is made of paper-thin, leaf-like sheets of unleavened flour dough. The chefs at Kontos Foods, providers of fillo dough and other ethnic bakery products, suggest this delicious Caramel Apple Strudel recipe – a dish that both adults and kids will love.



Caramel Apple Strudel

INGREDIENTS:

4 tbsp of butter for simmering apples
4 cups of Fuji, Pink Lady or other favorite baking apple
2/3 cup of brown sugar
1 tsp cinnamon
1/4 tsp allspice
Pinch of ground cloves
1/3 cup chopped pecans (optional)
1 stick of melted butter for brushing fillo dough
8 sheets thawed Kontos fillo dough
Jar of caramel topping, warmed
French vanilla ice cream

PREPARATION:

  1. Preheat oven to 350 degrees.
  2. Peel apples and slice them about 1/8-inch thick.
  3. Gently melt 4 tablespoons of butter in a pan with lid. Add the apples and saute, covered, for about 10 minutes until the apples soften.
  4. Combine the softened apples with brown sugar, cinnamon, allspice, cloves and optional nuts.
  5. Using a pastry brush, brush each of the 8 fillo sheets with the melted butter, placing one on top of the other.
  6. When you have all your buttered fillo neatly stacked, spoon apple mixture along the long edge of the stack, leaving a 2-3 inch border at each end.
  7. Fold the fillo over the ends first, then roll up long-ways like a jellyroll.
  8. Place the rolled strudel on a sprayed cookie sheet (with folded part underneath), brush with melted butter.
  9. With a sharp knife, cut diagonal slits in the fillo.
  10. Bake at 350 degrees for about 25 minutes, or until golden brown
  11. Before serving, drizzle – zig-zag fashion – the warmed caramel topping over the top. Serve warm with a scoop of French vanilla ice cream.

Tip: When working with fillo dough, keep a clean, damp dishtowel handy to place over unused sheets and prevent them from drying out.

“Many home cooks think fillo is only for experienced chefs, and are a little afraid to work with it. The trick when making desserts such as strudel, or savory dishes such as spinach spanakopita, is to handle the fillo carefully, keep it moist and be sure to baste it with butter or olive oil to create the perfect crunch and golden appearance,” said Steve Kontos, vice president of Kontos Foods. “When you pull your dish out of the oven, you will see that fillo is a feast for the senses, with its gorgeous appearance, mouth-watering aroma and perfect flaky texture. Your family and friends will be impressed!”

One-man A Cappella Vocalist and YouTube Star Peter Hollens

One-man a cappella vocalist and video producer Peter Hollens has been releasing videos on YouTube for over three years to overwhelming feedback. His videos have over 71 million views and his YouTube channel has 800,000-plus subscribers. Needless to say, it’s been a long time coming for this talent and his loyal following - on October 27, Hollens releases his self-titled debut album on Portrait/Sony Music Masterworks.


"The album is a mix of everything I love musically from classic folk to pop to soundtrack and Broadway melodies. I'm so excited to share this music with the world!" says Peter Hollens.

Recorded and produced by Hollens, the 13-track album features seven songs from his catalog in addition to six new songs. Recipe: Strawberry-Kale Smoothie

I recently learned a new smoothie recipe and it's simple and delicious. I'm sure you'll like it too. Kids will love it too as my son did when he had a taste of it. He even asked for seconds.

This fruit smoothie is very healthy as it contains fruits, yogurt, flax seeds, and kale. I have never eaten kale in raw form, but I thought it was interesting. We can't really tell it's there. This is a great energy booster and will keep you full for a while. You can save your money by making your own. I bought fresh strawberries, washed them, sliced them, and froze them. It's cheaper than buy the already-frozen fruits.

Thanks to the ladies from Hunger Actions for the cooking demos and assistance. It was fun as always.



Strawberry-Kale Smoothie
Prep Time: 5mins
Servings 2

INGREDIENTS:

1 cup chopped fresh kale, stems removed
1 cup frozen strawberries
1 ripe banana
1 cup plain yogurt
1 cup crushed ice


PREPARATION:
  1. Place all ingredients in a blender or food processor.
  2. Blend together. Add more ice if too thin or add more milk if too thick.
  3. Pour into 2 glasses to serve.


This makes a great drink for kids to have during snack time instead of juice boxes because it is more filling. You can also "hide" other nutritious ingredients that your kids may not like to eat by blending it inside the smoothie. They'll never know!

  • Other fruits and vegetables
