RECIPE: A Back-to-school favorite!

Now that back-to-school season is in full gear, I wanted to pass along this delicious kid-friendly, and not to mention quick, recipe that the whole family can enjoy. Since fall is an incredibly busy time of the year for most moms and dads, there usually isn’t much time for cooking a healthy and hearty meal for dinner during the weeknights. This kid-favorite recipe courtesy of WearEver for Four Cheese Pita Pockets is a healthier version of one of our favorite foods and can be whipped up in minutes. The best part is that you can pack leftovers for lunch the next day!

Four Cheese Pita Pocket

Ingredients

1 cup ricotta cheese
4 medium pita breads
¾ cup shredded Italian cheese mixture (mozzarella, provolone, Parmesan, etc.)
1 teaspoon dried Italian seasoning
Marinara sauce for dipping, if desired


Preparation

1. In a bowl, stir together the cheeses, basil, oregano and pepper.

2. Cut the break halfway around the edge, fill with the cheese mixture.

3. Spray your WearEver Cast Lite Fry Pan with cooking spray and set over medium-high heat. Grill the sandwiches until the cheese melts. Cut in half.

4. If desired, serve with your favorite marinara sauce on the side. Repeat with the remaining sandwiches.
