Recipe: Broccoli Frittata

Frittata is an egg-based Italian dish similar to an omelette or quiche. I think of it like an "egg pizza". Frittatas are great for breakfast (or lunch or dinner). It's an easy recipe to make. Add broccoli to it or other leftovers if you desire. In this recipe, we will make broccoli frittata.


Broccoli Frittata
Serves 8

INGREDIENTS:

1 broccoli head (about 2 cups)
1 tbsp vegetable oil
1 cup white onions, chopped
2 cloves garlic, minced
1/2 red pepper, cut into strips
6 large eggs
1/4 cup milk
1/2 cup cottage cheese
pinch nutmeg
salt and pepper to taste
1/4 cup Parmesan cheese

PREPARATION:

1. Rinse broccoli and trim ends. Cut stems and florets into 3/4" pieces.

2. In a 10" non-stick skillet, heat oil, add the onion and garlic and cook over medium heat until onions soften. Add broccoli and red pepper. Stir-fry until tender crisp.

3. Mix together eggs, milk, cottage cheese, nutmeg, salt and pepper. Then pour into broccoli mixture.

4. Cover and cook over medium-low heat for about 5-10 minutes or until set but still slightly most on the top. Sprinkle Parmesan cheese. Place under broiler for 3 minutes to lightly brown on top.

5. Loosen edges of frittata and cut into pie-shaped wedges.
