Recipe: Wild Rice and Mushroom Pilaf

Rice Pilaf is a rice dish cooked with seasoning (and or chopped vegetables) and is more flavorful than ordinary steamed rice.

Wild Rice and Mushroom Pilaf
Serves 6-8

INGREDIENTS:

2 cups wild rice
4 cups water
1 onion, diced
4 cups mushrooms, cut into quarters
1 tsp thyme
1 tbsp salt
1 tbsp black pepper
4 tbsp butter

PREPARATION:

1) In a heavy bottomed sauce pan, saute onion and mushrooms until browned. Add thyme, salt and pepper.


2) Stir in wild rice and cook for one minute.

3) Add water and bring to a boil. Once boiling, cover and turn down to a simmer. Let cook for about 30-40 minutes or until all water is absorbed.


4) Do a taste test to see if the wild rice is nice and tender. If not ready, add a bit more water and let simmer for another 10 minutes.
