Tuxedo Peeps: Last Minute Easter Treats

Easy Tuxedo Peeps
Makes 12

INGREDIENTS:
  • ½ cup + 1 Tablespoon chocolate chips
  • ½ cup + 1 tablespoon white chocolate chips
  • 1 tablespoon coconut oil
  • 12 bunny-shaped marshmallow Peeps
PREPARATION:

1. In a microwave-safe bowl, melt chocolate with ½ tablespoon of coconut oil. Heat just until the mixture starts to melt, it should not be hot to the touch. Stir until smooth. Repeat with white chocolate. Spoon 1 tablespoon of each melted chocolates into a small plastic bag.

2. Dip the bottom of each marshmallow Peep into the chocolate at a diagonal. You’ll need to dip them twice—once with a diagonal to the left, and once with the diagonal slanting to the right. Allow excess chocolate to drizzle from the bottom of the bunny before placing on a piece of parchment paper. Pipe a white chocolate bow-tie onto the neck of the bunny by snipping a small corner from the plastic bag.

3. Repeat until all chocolate is used. Chocolate-dipped Peeps should have white chocolate bows, and white chocolate-dipped peeps should have chocolate bows.

4. Allow your Peeps to cool and harden by placing them in the fridge. Serve and enjoy!
