Muffin Tray Omelettes

When you're in a hurry early morning and you want to whip up a quick and healthy breakfast, try muffin tray omelettes. This was actually my first time making it. I made it with whatever ingredients I had. I've seen it somewhere a while back and finally decided to try it out. It turned out pretty good and very delicious. My son likes it with a little bit of Ketchup on top. 


I decided to make this a recipe post requested from a friend. I don't have an exact measurement or amount for the ingredients, but I made about a dozen cups last night. Here are the ingredients I used:

  • half a red bell pepper
  • half a green bell pepper
  • half a yellow bell pepper
  • ground pork (about 1 cup)
  • 3 large eggs
  • half cup of milk
  • shredded cheese
  • salt and pepper to taste


1. Preheat oven to 375F.

2. Grease the muffin tray. I used coconut oil.

3. Mix ground pork with salt and pepper. Then I microwaved it in a covered dish for about 2 mins.

4. Chop up the bell pepers and set aside.

5. Whisk the eggs in a large bowl, add in milk, chopped bell peppers, and shredded cheese.

6. Pour the mixture evenly into each muffin tray well.

7. Bake for around 20 minutes.

8. Remove muffin tray and let cool for few minutes. Before taking out from the tray. If it's still hot and you take it out, it will fall apart. I've had that experience. So let it "set" for a little while.

Also good to pack for kids school lunch (using ham instead of ground pork).
